Summer Fresh, Summer Long

Need that classic summer refresher? Then look no further! Here’s a little mix you’ll want to put on replay all summer long. For pool-ready cocktails, I always love a fresh blend of herbs and fruit to create a unique flavor profile that keeps the tastebuds wanting more. In this recipe, the tartness of blueberries and the cooling sensation of mint create the perfect balance in this tequila spritz.


Blueberry mint spritz

MINT SIMPLE SYRUP

  • 1 cup water

  • 1 cup sugar

  • 1 cup mint

    • Combine water, sugar, and mint leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep for about 30 minutes.

    • Pour syrup through a mesh strainer to remove mint leaves and set aside to let cool.

Blueberry Puree

  • 1 cup fresh blueberries

  • 3/4 cup fresh lemon juice

    • Blend fresh blueberries and lemon juice until completely pureed.

    • Pour puree through mesh strainer to remove any lumps.

ingredients

  • 2 oz tequila blanco

  • 2 oz blueberry puree

  • 1 oz mint simple syrup

  • 1 oz Pellegrino or sparkling mineral water

  • Crushed ice

  • Blueberries, blackberries and mint sprig (for garnish)

STEPS

  1. Fill highball glass with crushed ice. If poolside, style it with your favorite acrylic glass for shatterproof fun.

  2. In a shaker with ice, add tequila, blueberry puree, and mint simple syrup.

  3. Shake until chilled and strain into your glass.

  4. Top off with Pellegrino or sparkling mineral water.

  5. Garnish with fresh blueberries, blackberries, and mint sprig.
